ESS Defence provides food service and hospitality support to Defence sites across Australia. We deliver high-quality meals that support the wellbeing of Australian Defence Force personnel.

We are seeking an experienced Chef to join our team in Cairns. This casual opportunity is ideal for chefs who enjoy working in a fast-paced kitchen environment, delivering high-quality meals and supporting daily catering operations.

KEY RESPONSIBILITIES

• Prepare high-quality buffet meals for breakfast and dinner service
• Maintain food safety, hygiene and HACCP standards
• Support kitchen operations including stock control and deliveries
• Ensure food quality, presentation and portion control standards are met
• Assist with menu execution and daily food production
• Work collaboratively as part of a professional kitchen team

SKILLS AND EXPERIENCE

• Certificate III in Commercial Cookery
• Experience in commercial kitchens or catering environments
• Strong knowledge of HACCP, food safety and allergen management
• Excellent organisational skills and attention to detail
• Reliable with a positive and team-focused approach
• Ability to obtain and maintain a National Police Check
