ESS Defence provides catering and hospitality support to Defence sites across Australia. We deliver high-quality meals that support the wellbeing of Australian Defence Force personnel.

We are seeking a passionate and motivated Chef to join our team at RAAF Base Glenbrook. This hands-on role is perfect for a Chef looking to step up their career and take on greater responsibility in a supportive environment. You will lead and mentor a small kitchen team, maintain high food and safety standards, and play a key role in delivering quality dining experiences for Defence personnel.  With strong operational support and clear pathways for career advancement, this is an excellent opportunity to grow your leadership skills while continuing to do what you love.

KEY RESPONSIBILITIES

• Lead and support a small team in the kitchen team to deliver exceptional food service
• Prepare high-quality meals for breakfast, lunch, dinner and functions
• Oversee food preparation, presentation and portion control standards
• Maintain food safety, hygiene and HACCP compliance
• Assist with menu implementation, food forecasting and waste minimalization
• Support stock control, ordering and inventory management
• Train, coach and develop team members
• Foster a positive, collaborative and safety-focused kitchen culture
• Support operational and catering requirements across the site

SKILLS AND EXPERIENCE

• Minimum certificate III in Commercial Cookery
• Previous experience in managing or mentoring a small team in a commercial kitchen
• Experience in bulk catering or high-volume food production environments
• Strong knowledge of HACCP, food safety and allergen management
• Functions and events management experience
• Ability to lead, motivate and develop team members, while working collaboratively with FOH and the broader site team
•  Strong Back of House (BOH) experience with the flexibility and willingness to support Front of House (FOH) operations when required.
• Ability to obtain and maintain a National Police Check and Defence clearance
