We currently have a unique opportunity for a Chef to join our team at Lavarack Barracks in Townsville. Full-time permanent role completing 76 hours a fortnight with opportunity for over-time. This position is suited for candidates that like to work in a fasted paced supportive team environment. Training is provided and you'll be working for one of the largest catering and support services company in the world!

The Person:

• Qualified Chef – Certificate III or above in Commercial Cookery
• 2 years+ Previous experience in a bulk cooking
• HACCP Food handling experience
• Attention to detail, fantastic food presentation and strong organisational skills.

The Position:

• Planning menus and estimate food requirements
• Plan, prepare and display a buffet
• Plan the catering for an event or function
• Ordering, labelling and managing stocks maintaining First in First Out system.
• Storing food in temperature-controlled facilities
• Making adjustments to food items according to the need of guests with allergies or specific diet concerns.
• Portioning food, placing it on plates, and adding gravies, sauces and garnishes
• Train other kitchen staff and apprentices.
• Develop and update industry knowledge
• Ensuring quality of food.
• Regulating temperatures of ovens, grills and other cooking equipment
• Apply catering control principles.
• Clean and maintain kitchen premises.
• Maintain Consumer satisfaction.
• Work with colleagues and customers
• Perform other duties within her capabilities as required by management
• Follow Compass health and safety, security procedures
• Adhere to our safety culture
• Follow safe manual handling practices
• Follow safe food handling procedures
