We are currently seeking to appoint a HeadChef to lead our small food and beverage team based at the Newcastle Mater Hospital.
The role will see you manage the kitchen operations in a safe and efficient manner supporting and promoting our safety culture framework. You will prepare and cook quality food for our customers in conjunction with the contractual requirements of the site and ensure that all tasks associated with food production are performed with regard for all health and safety and food safety regulations.
The successful candidate will be service-centric and truly believe that going the extra mile isn't the exception, it's the expectation. Using your hands-on management style you will motivate your team with passion and enthusiasm, uniting your team to exceed customer expectations.
The Role:
Menu planning with a continued a focus on improving our retail offerings and presentation
Prepare, cook and present cafe items from our menus and daily specials to a high standard
Being hands on whilst working calmly and positively influencing our kitchen team
Responsible for mentoring, training, and development of the kitchen team
Observation of and implementation of allergy awareness controls.
Monitor costs with special regard to portion control, waste minimisation, stock control and ordering.
Ensure the safe production of a quality product without comprise to the food safety guidelines provided
Maintaining our food safety program and associated HACCP documentation
Manage, organise and execute on site client functions
You:
A minimum of Certificate III in Commercial Cookery
Full understanding of OHS, Hygiene & HACCP regulations
Good allergen knowledge & dietary awareness
A great eye for detail and natural flair to identify new and enticing food offerings
Ability to work under pressure while maintaining a positive outlook and professional manner
Flexible approach and a positive attitude
Experience and ability to lead and mentor a small team
Previous menu planning, including ordering
