Senior Sushi Chef

We’re seeking a Senior Sushi Chef with passion, precision, and vision to lead the creative evolution of our sushi and Japanese-inspired offering at AO26. This is a casual, senior-level opportunity that offers the chance to make your mark at one of Australia’s most high-profile events.

The Position:

  • Lead the design and execution of a premium sushi and Japanese menu
  • Develop, test, and document recipes with attention to consistency, flavour, and presentation
  • You’ll take ownership of menu development, recipe creation, and costing, while ensuring the offer is both premium and commercially viable.
  • Collaborate with the Head Chef and Culinary Director to align the offer with AO26’s creative vision
  • Manage food costing and budgets without compromising on quality or innovation
  • Source premium ingredients and work with suppliers on availability and seasonality
  • Establish efficient prep processes and workflows for sushi production
  • Train, mentor, and lead BOH team members in traditional and modern sushi technique
  • Collaborate across culinary teams to integrate sushi into event menus and activations

 

The Person:

  • Proven experience at a senior level in Japanese cuisine—Head or Sous Chef level ideal
  • Expertise in sushi preparation, with excellent knife skills, traditional technique and deep product knowledge
  •  Strong understanding of menu development, cost control, and kitchen operations
  • Creative mindset and ability to balance innovation with commercial goals
  • Calm, collaborative, and confident in leading a team during high-pressure service periods
  • Flexible and available for a casual engagement across varied hours, including weekends and event activations
