We are looking for a highly motivated, enthusiastic and creative Full Time Sous Chef who wants to showcase their appetite for producing exceptional fresh seasonal food and demonstrate their flair and passion at Old Parliament House, Canberra, across a range of premium functions and galas.

Old Parliament House is a premium location and produces the finest quality of food – your skills will be put to the test, your creative limits challenged, and your passion will be able to shine.

The primary role is to be hands on and ensure the food offered at the site is delivered to an exceptional standard.

A bit about you

  • Chef's Trade Qualifications with at least 3+ years’ experience in a similar role
  • Proven ability in large-scale high-end functions, fine dining a la carte restaurant experience
  • Talent and drive to work under pressure, un-supervised and to tight deadlines
  • Excellent knowledge of all kitchen procedures and operations
  • Passion for understanding OHS, Food Safety & HACCP regulations

Full availability over 7 days including during the day, during the evening and weekends is required

  • Produce incredibly delicious culinary offerings in line with current food trends
  • Actively maintain a complete awareness and desire for nutrition and healthy eating
  • Championing the significance and accurate implementation of allergy awareness controls
  • Influencing food costs via portion control, waste minimisation and stock control.
  • Pursuing and fulfilling great ideas and seeking opportunities for improvement
  • Ensure the safe production of a high-quality product without comprise to the food safety guidelines provided
