Head and Sous Chef positions 

  • $109,000 Base Salary + Super (Role dependent)
  • Accommodation and meals provided
  • Drive in drive out, or Bus in bus out from Mackay OR Fly in Fly out from Brisbane 

ESS provides multi-service capability to major companies and organisations operating in remote sites, gold mines and coal fields. We provide vital workplace support for people working in some of the most isolated terrains in the world, from oil rigs in the North Sea to gold mines in the Australian Outback. Due to anticipated growth across our flagship portfolio in Central QLD, we have an exciting opportunity for an experienced Head Chef, working 14:7 rosters (2 weeks on, 1 week off).

The Positions

  • Work collaboratively with a team of Chefs, Kitchen Utilities and Dining Room employees
  • Buffet style bulk cooking for Breakfast, Crib, Lunch, and / or Dinner and Desserts
  • Ensure OH&S compliance, adhering to safe work practices and food handling procedures
  • Ensure all catering controls are in place, and wastage is kept to a minimum
  • Maintain high standards of food hygiene, safety, infection control and cleanliness in accordance with Compass standards
  • Managing catering team performance and employee development

The Person

  • Chef Qualifications / minimum of Cert III in Commercial Cookery
  • Experience within bulk catering environments
  • Excellent knowledge of all kitchen procedures and operations
  • Experience in leading a brigade, rostering and cost control
  • Experience with hygienic work practices and appropriate HACCP guidelines
