ESS Defence delivers the best hospitality and support services to Defence sites across Australia. From dining facilities to accommodation and recreation areas, our teams support Defence personnel by providing consistent, high quality food services that contribute to their wellbeing and daily operations.

We are seeking an experienced and motivated Head Chef to join our team supporting the Australian Defence Force through our ESS business. This role offers the opportunity to lead kitchen operations, develop teams and deliver high quality meals across multiple service styles within a structured Defence environment.

Role Location:
RAAF Williamtown, NSW

Your responsibilities will include:

• Leading and managing a small kitchen team to deliver daily food service
• Overseeing food production across bulk, buffet, cook to order and plated function service
• Managing ordering, stock control and menu planning
• Maintaining food safety, HACCP and quality standards
• Ensuring efficient kitchen operations while managing costs and reducing waste

What we’re looking for:

• Certificate III in Commercial Cookery, with Certificate IV or trade qualification preferred
• Proven experience leading kitchen teams in a commercial environment
• Experience across bulk catering, buffet, cook to order and function service
• Strong skills in menu planning, ordering and cost control
• Sound knowledge of food safety with a current Food Safety Supervisor certificate
• Ability to obtain and maintain a National Police Check and Defence clearance
