We are seeking a highly skilled and creative Sous Chef to join our Retail culinary team at Melbourne Olympic Park, boasting multiple dining outlets and year-round events on an international scale. This senior role will see you working closely with the Executive Chef to execute and oversee retail dining experiences for our diverse audience, while showcasing the best of Victorian produce on a grand scale.

Showcase your talents across this globally recognised destination for the best of live sport and entertainment including five iconic venues (John Cain Arena, Rod Laver Arena, Margaret CourtArena, Kia Arena and CENTREPIECE).

Leveraging Levy Australia’s cutting-edge, guest-centric approach you will be tasked with delivering legendary experiences for the up to three million guests to hundreds of events the park welcomes each year, including the world’s biggest tennis tournament, the Australian Open. Fast-paced, and no two days the same, you will be responsible for:

The Position 

  • Collaborate with the Senior Culinary team to lead the retail production team across all F&B outlets during events,
  • Actively maintain a high standard of food safety, allergen awareness, and OHS
  • Maintain the highest standards of food quality and presentation across high volume food production in an extremely fast paced environment
  • Assist retail brands with menu and recipe development
  • Support and assist the corporate team across premium dining during large events
  • Ensure cost-effective kitchen management with quality control, waste minimisation and  inventory monitoring.
  • Train, mentor and Implement a customer-focused mindset throughout the retail culinary team, enhancing guest experiences and contributing to the event's reputation for outstanding food and beverage services.

 The Person 

  • Minimum Cert IV Commercial Cookery + Food Safety Supervisor Certification     
  • Demonstrated leadership expertise in a in a high volume retail multi-unit setting
  • Commercial understanding of retail costings, food production and logistics
  • A passion for crafting innovative, trend-forward dishes tailored to a discerning audience, adding a distinctive flair to culinary experiences.
  • An exceptional communicator, adept at fostering seamless collaboration among kitchen staff, management, and cross-departmental teams.
  • A high level of commercial acumen & Proficiency in applications of Microsoft 365
