ESS Defence provides food service and hospitality support to Defence sites across Australia. We deliver high quality meals that support the wellbeing of Australian Defence Force personnel.

We are seeking an experienced Chef to join our team at RAAF Williamtown. This role is ideal for chefs who enjoy bulk cooking, consistent service delivery and working within a structured and supportive environment.

KEY RESPONSIBILITIES

• Prepare high quality buffet-style meals for lunch, dinner and functions
• Maintain food safety, hygiene and HACCP standards
• Support stock control, inventory and kitchen organisation
• Ensure consistency in food quality, presentation and service
• Work as part of a small team during daily operations

SKILLS AND EXPERIENCE

• Certificate III in Commercial Cookery
• Experience in commercial kitchens with bulk cooking and à la carte service
• Knowledge of HACCP, food safety and allergen management
• Strong attention to detail and organisation
• Reliable, team-focused and safety-conscious
