ESS Defence provides food service and hospitality support to Defence sites across Australia. We deliver high quality meals that support the wellbeing of Australian Defence Force personnel.

We are seeking an experienced Chef to join our team at HMAS Albatross, Nowra. This role is ideal for chefs with bulk cooking experience looking for stability and a supportive kitchen environment.

KEY RESPONSIBILITIES

• Prepare high-quality buffet-style meals for breakfast, lunch, dinner and events
• Maintain food safety, hygiene and HACCP standards
• Support stock control, deliveries and kitchen operations
• Ensure food quality, presentation and portion control
• Provide professional service during meal periods

SKILLS AND EXPERIENCE

• Certificate III in Commercial Cookery
• Experience in large commercial or bulk catering kitchens
• Strong knowledge of HACCP, food safety and allergen management
• Attention to detail with focus on quality and presentation
• Reliable and team-focused approach
