We are seeking experienced a Chef and a Chef Supervisor to join our teams at Randwick Barracks.  You'll work alongside experienced hospitality professionals, preparing quality meals, maintaining high culinary standards and contributing to exceptional dining experiences in a structured and rewarding environment.

ESS Defence provides food service and hospitality support to Defence sites across Australia. We deliver high-quality meals that support the wellbeing of Australian Defence Force personnel.

KEY RESPONSIBILITIES

• Prepare high-quality meals in a bulk cooking and catering environment
• Maintain food safety, hygiene and HACCP standards
• Ensure quality, portion control and food presentation standards are met
• Support stock control, ordering and inventory management
• Work collaboratively as part of a professional kitchen team
• Support meal services, functions and daily kitchen operations
• Assist with menu implementation and daily food production planning
• Promote a positive, safe and productive kitchen culture

SKILLS AND EXPERIENCE

• Certificate III in Commercial Cookery
• Experience in commercial kitchens, catering or high-volume food production environments
• Knowledge of HACCP and food safety standards
• Strong organisational skills and attention to detail
• Reliable, professional and team-focused approach
• Excellent communication and customer service skills
• Previous leadership or supervisory experience highly regarded for Chef Supervisor applicants
• Ability to obtain and maintain a National Police Check (Defence clearance required for Chef Supervisor role)
