THE POSITION:
Oversee the kitchen at a premier ski resort, ensuring smooth, efficient operations year-round
Stock control and budget management, including minimising food wastage
Develop seasonal menus for fine dining, banquets, canapés, and functions, tailored to the alpine setting
Actively maintain a high standard of food safety, allergen awareness, and OHS
Maintain the highest standards of food quality and presentation
Build and maintain relationships with clients and other key stakeholders
THE PERSON:
Minimum Cert. III Commercial Cookery
Proven experience in high-end kitchen operations, with a focus on quality and efficiency
On the cutting edge of culinary trends and cooking techniques, with an eye for detail and presentation
You have a passion for fresh and sustainably sourced local ingredients
Be flexible in delivering menus according to dietary requirements
Solid understanding of allergen management, food safety and infection control
