HEAD CHEF – FULL TIME – RAAF WILLIAMTOWN 

Leadership role | Weekday roster | Defence kitchen environment

• Full-time Head Chef role at RAAF Williamtown
• Lead kitchen operations across multiple service styles
• Monday to Friday roster with occasional weekends

ESS Defence provides food service and hospitality support to Defence sites across Australia. We deliver high quality meals that support the wellbeing of Australian Defence Force personnel.

We are seeking an experienced Head Chef to lead our kitchen team at RAAF Williamtown. This role is ideal for a strong leader with experience in bulk catering and function service who enjoys structured operations and team development.

KEY RESPONSIBILITIES

• Lead and manage kitchen team to deliver daily meal service
• Oversee food production across bulk, buffet, cook-to-order and functions
• Manage ordering, stock control and menu planning
• Maintain food safety, hygiene and HACCP standards
• Control costs, reduce waste and ensure efficient operations

SKILLS AND EXPERIENCE

• Certificate III in Commercial Cookery (Cert IV preferred)
• Experience leading kitchen teams in high-volume environments
• Background in bulk catering, buffet and function service
• Strong menu planning and cost control skills
• Current Food Safety Supervisor certification
• Ability to obtain National Police Check and Defence clearance
